Best Skirt Steak ever!

I love this cut of meat and have cooked it for years when I can find it. The PCR skirt steaks are the best I have ever had - I love to cook them using Rick Bayless's skirt steak taco recipe with fresh salsa and guacamole (https://www.rickbayless.com/recipe/charcoal-grilled-skirt-steak-tacos/). My husband says they are lusciously tender and flavorful. When I serve this for guests there is never a scrid left!
