Not Your Grandfather's brisket

On the advice of a friend, I purchased a Pumpkin Creek Ranch full packer brisket for our Christmas dinner. I had already purchased a beef tenderloin for this occasion, but last moment decided to smoke the brisket instead. The brisket did not disappoint. I had just a little to trim off, unlike the grocery store purchased briskets. So when I purchased a 12lbs brisket, I only trimmed off about 3/4 of a pound of fat, and that got rendered into tallow. The brisket was trimmed nicely, and the marbleing was out of this world. smoked for 14 hours and it was tender as it could be. No one left hungry!
